A Slow Cooker Pot Roast Recipe and a $25 Costco Cash Giveaway {#CostcoPork}
The hubster and I went out to Costco this week to get our membership there. I was pretty excited to look around at the deals but I was ultimately there to buy pork for the crockpot meal I came up with.
Here was my mode of transportation while in the store. I was not about to attempt traveling around in there on my crutches.
And here, we easily found the pork that was on sale this week. {Do you remember me telling you about the amazing deals on pork at Costco this month?} The cut of pork I was shopping for was the boneless sirloin tip and once I had it, I couldn't wait to get home and come up with a recipe for dinner.
After some thought, I decided to do a simple, Slow Cooker Pot Roast. Here's how it's done.
Slow Cooker Pot Roast Recipe
Time needed:
- 10 min. prep
- 7-8 hours cooking
What you'll need:
- 2-3 lbs. of Boneless Sirloin Tip Pork
- 1/3 bag of mini carrots
- 3 stalks of celery {washed and chopped}
- 2-3 white potatoes {washed and quartered}
- 1 medium yellow onion {chopped}
- 1 packet of McCormick's Pot Roast Seasoning
- 3/4 cups of water
What to do:
Toss the veggies {washed and chopped} into the bottom of the slow cooker.
Next, trim any fat off the pork and partially slice the pork into serving sizes. Don't slice the meat all the way through to keep it one piece. Fanning the meat helps to get the seasoning into it rather than just on it. Place the partially sliced pork right on top of the veggies in the crockpot.
Finally, take your seasoning and stir it with 3/4 cups of water. Poor the mixture over top of the meat and down the sides to the veggies below.
Put the top on the slow cooker and set your timer for 7-8 hours.
When it's done, make sure you check the temperature of the pork using a pork thermometer. If all is well, serve it up.
*Remember* In May, the USDA reduced the temperature guideline for pork loins, chops and roasts from 160 to 145 degrees F, with a three-minute rest. This will yield a juicy, flavorful product that may be pinker in color than most home cooks are used to. Ground pork, like all ground meat, should be cooked to 160 degrees.
I chose to use a slotted spoon to scoop out the veggies in one bowl.
Then I placed the pork on a platter and used a ladle to poor the juices from the slow cooker over top, yielding a juicy and delicious meal.
I served this to my family and everyone gobbled it up. The flavors were so rich and yet it was so simple to make. My husband and daughter had seconds and my mother-in-law asked for my recipe.
Success? I think so!
